The house also preserves the traditional art of olive curing, slowly prepared over several months to reveal a supple texture and refined flavor. In the morning, it is possible to visit the old stone mill in the Madeleine district of Nice, still in operation. Barale is a historic pasta shop in Nice where generations of locals have come to buy fresh ravioli, gnocchi (known in Nice as merda di can, a traditional local specialty made with potato and Swiss chard) and traditional pasta. It is one of those rare addresses that quietly reflect everyday life in the city.
Ravioli are sold by the dozen (I usually recommend two to three dozen per person for a starter, and three to four for a main course). The fillings range from classic Niçoise recipes such as daube niçoise (a traditional beef stew) or ricotta and spinach, to more original creations like lemon and ginger.
They also offer freshly made sauces, grated Parmigiano, and traditional panisses (chickpea fritters, cut into sticks and lightly pan-fried, much like French fries).

Their original boutique, located in the shade of the Citadel of Villefranche, still houses the production of their iconic soaps, now carefully overseen by the next generation. A true family story, rooted in craftsmanship and continuity.
The perfumes and home fragrances are also exceptional, with elegant scents such as vetiver, patchouli, white musk, sandalwood and jasmine.
My personal favorites, which I love to offer as gifts, include verbena and orange blossom, as well as their authentic Savon de Marseille.
